Description
ORIGIN OF GRAPES : Carefully selected vineyards with old vines, located at special locations of Pyrgos. Megalochori, Exo Gonia, Akrotiri and Fira.
VINIFICATION : Classic white type vinification, partial pre-fermentative maceration. Only free-run juice is used; fermentation under controlled temperature with selected and indigenous yeasts. Approximately 10% of the wine ferments in oak. Minimalistic winemaking approach is followed during all stages of production. Wine ages “sur-lies” for at least 8 months.
DESCRIPTION : Typical and austere expression of Santorini. Mineral nose with fruity (peach , pear) and herbal (tea, chamomile) hints. Creamy feel balancing Assyrtiko’s nerve and high acidity. Highly concentrated aromas, fine complexity and long salty aftertaste.
AGEING POTENTIAL : 7-10 years
Best served decanted at 10-12 oC, Pairs ideally with top class roasted fish, shell fish, Asian dishes, lamp or any type of white meat cooked with aromatic herbs.
