This way the increase of the concentration of sugars is succeeded naturally. Then, the crushing of the grapes takes place and the alcoholic fermentation starts until it is interrupted by frigidity so that the sweet taste of the wine is maintained. Organoleptically aromas such as sour cherries, dogberry jam, caramel and clove are distinguished in the nose.
